What do you guys think about cold salads (other than the traditional lettuce and green deliciousness). To be honest, I've never been a fan of cold potato, bean or pasta salad. Maybe it's because I have never liked mayonnaise or possibly because I'm Italian and feel that pasta needs to be hot with marinara sauce, not cold with mayo. 

Until now. My husband recently created a vegan version of his old time favorite, potato salad. He used Just Mayo and added some pickle juice, apple cider vinegar and lots of spice. The salad was very light in comparison to what I remembered about traditional heavy potato salads made with thick mayonnaise. And the flavor really popped with all of the spices, onion and red bell pepper. 

You can bring this dish to your next picnic or make it as a side dish for an upcoming meal. If you are at a barbecue with a crowd of non-vegans (who are still not convinced that vegan can be delicious), don't tell them it's it's vegan and see what they say! :-)

Ingredients*

  • 4-5 red potatoes, cut in 1" cubes
  • 1/4 c celery, chopped
  • 1/4 c scallions, chopped
  • 1/4 cup red bell pepper, chopped
  • 3 Tbsp vegan mayonnaise (Vegenaise or Just Mayo are both great!)
  • 2 tsp yellow mustard
  • 2 Tbsp pickle juice
  • 1/2 tsp apple cider vinegar
  • 1/4 tsp crushed red pepper flakes
  • 1/4 tsp smoked paprika powder
  • 1/4 tsp garlic powder
  • black pepper and sea salt to taste
 *Recommend organic whenever possible

How to make

Boil the potatoes in a sauce pot until soft (pierce with a fork). Strain and transfer the potatoes to a bowl. Mix in the celery, scallions and red bell pepper. 

In a separate small bowl, mix the remaining ingredients: vegan mayo, yellow mustard, pick juice, apple cider vinegar, crushed red pepper flakes, smoked paprika, and garlic. Stir well until all of the ingredients are blended. Add the mixture to the potatoes and stir to fully coat the potatoes. Recommend refrigerating for two hours or overnight to fully maximize the delicious flavor of the spices. Add black pepper and sea salt to taste. (Personally, I find that the pickle juice adds plenty of salt and the other spices add so much flavor that you really don't need much additional salt.)
