Spicy Lentil Spinach Soup

Not sure what's happening in your world, but it's been wet and chilly for countless days in Atlanta, which inspired this {delicious} Spicy Lentil Spinach Soup with Cracked Wheat Rustic Bread. It's delicious and healing!

1/4 cup olive oil
1 yellow onion, chopped
3 carrots, chopped
2 celery stalks, chopped
3 garlic cloves, diced
1 tsp dried oregano
1 tsp mustard seed

1 tsp black cumin seed
1 tsp fennel
1/4 tsp cayenne or 1/2 tsp red pepper flakes

1 (BPA free) 28 oz can or carton of crushed tomato
4 c veggie broth
4 c water
2 cups dry lentils
1 c spinach, chopped
sea salt and black pepper to taste

How to Create

1. In a large soup pot, heat oil over medium heat. Pop (add) mustard, black cumin and fennel seeds for one minute. Add carrots, celery, onion and cook until onion is soft and tender. Add garlic, oregano, cayenne or red pepper. Stir in lentils, veggie broth, water and tomatoes. Bring to a boil then reduce heat and simmer for an hour. Just before serving stir in spinach and add salt and pepper to taste.

Enjoy now or portion it out to freeze for days ahead!
