Fun & Flavorful Fajita Night!

This build your own fajita station is a great way to have a nutritious meal at home that is also fun for everyone involved! Be in control of your nutrition & get creative with all of these nutrient dense ingredients!

     Ingredients 

  • Portabella Mushrooms
  • Green, Red, and Yellow Peppers
  • Red Onion
  • Pinto Beans
  • Rice
  • Tortilla
  • Avocado
  • Tomato
  • Mixed Greens
  • Cilantro
  • Salsa
  • Smoked Paprika
  • Chili Powder
  • Cayenne Pepper
  • Nutritional Yeast
  • Lime juice
  • Salt & Pepper

The ingredients above can be combined in a tortilla shell like a traditional fajita, or added over a bowl of mixed greens to enhance your meal’s nutrient density even more!  Slice all veggies into long thin pieces. Sauté your peppers and onions first, since they will take the longest to cook. Add in your nutritional yeast, smoke paprika, cayenne pepper, salt & pepper to taste. Keep warm on the side while you cook your sliced portabella mushrooms. Feel free to use the avocados alone or make homemade guacamole, as shown in the photo here. Add your cooked rice and pinto beans to your plate and enjoy! This meal is quick, simple, and very colorful! The variety of colors and plant based ingredients in this meal pack phytochemicals, antioxidants, and of course incredible flavors onto your plate! And last but not least, everyone can build their own, which is always fun!
